This dish takes a few steps but all are easy.   I adapted this recipe from One Green Planet’s MASHED POTATO CASSEROLE WITH BROCCOLI AND A CAULIFLOWER GRAVY.  I already had gravy in the freezer – leftover from my effort at poutine – seen just below.  It was a leek & sage brown gravy & the recipe is HERE.  When I end up with more of something than I need for a recipe – I often freeze the extra in Ziplock bags that I store flat – so they take up very little space in my freezer – as seen just below the poutine here.  Just squeeze the air out & place it on top of a frozen pizza or some other flat item (a cookie sheet) until it freezes.  It thawed quickly in the bag when placed under hot running water.  You can use this gravy recipe or your own favorite one or the easiest one ever – HERE.

I wanted to use one of the vegan cheeses I recently bought from Soledad Goat Sanctuary…seen just above.  It is creamy & has a tang sort of like sour cream & I thought it would add a nice layer of flavor & some richness to the potato level.  You can use any soft cheese you like (cream cheese or whatever) or eliminate that ingredient with no real negative impact on this dish.

The nice thing about this dish is that it combines potato, broccoli & gravy in one decadent dish & it is easy to transport to a family or friend’s house as your vegan contribution to an otherwise potentially non-vegan meal.  Meat eaters will love it & vegans could really get away with eating only this & not feeling too ripped off.

I used fresh broccoli but frozen will do – if you prefer it.

Deconstructed Vegan Shepherd’s Pie or Broccoli & Mashed Potato Casserole

INGREDIENTS

2 large heads of broccoli – cut into florets

10 small red potatoes – cut into large chunks (I left skins on)

1 (14 oz) can of white beans – drained & rinsed

2 cups gravy of choice (two recipes are linked above)

4 oz soft vegan cheese (optional) OR 2-4 TBS vegan butter (or both if you are feeling decadent!)

2 garlic cloves

1 cup non-dairy milk (I used unsweetened almond milk)

1/4 cup parsley

1 large rosemary sprig – leaves removed

small handful of fresh oregano

few sprigs of fresh thyme

2 TBS olive oil

DIRECTIONS

Heat the oven to 350 degrees F.

Make your gravy.  Set aside.

Prepare the broccoli (try very hard not to overcook it).   Steam or boil it for 2-3 minutes & drain it under cold water   When cool enough to handle – chop it pretty small.  (I take the steamed stalks & blend them into wet food for my dogs.)  Chop the thyme & oregano & toss with the broccoli & 1 or 2 TBS olive oil.  Season with S&P.  Set aside.

Puree the beans and 1/2 cup almond milk in a high power (or regular) blender until smooth.  (I REALLY love my Magic Bullet that I recently bought at Bed Bath & Beyond for $30 & I recommend them.)  Add the rosemary & parsley & puree them into the bean mixture.  Set aside.

Boil the potatoes and the garlic cloves until the potatoes are very soft.  Drain.  Return to the pan.  Add the bean puree, soft cheese or butter (or both) & blend with a hand mixer or immersion blender.  Add as much additional milk as you need to make them thick but creamy.  Season with S&P.

I sprayed my casserole pan with cooking spray but that probably is not necessary.

Spread the potatoes on the bottom.  Top with as much gravy as you like (I used about 2 cups – which was A LOT (though not too much for ME) – so add as much as feels right to you) & then the broccoli.

Bake, uncovered, for 25 minutes.  Let it rest a few minutes & serve!

If you have extra gravy, either put it on the table or freeze it.

Because I am trying to spend as little money as possible on groceries & I needed a roll for my Po’ Boy – I had to make my own bread!  I used Deep South Dish’s recipe found HERE for Pistolette Sandwich Rolls.  There were several steps but none were difficult.  Plus – the whole house smelled like freshly baked bread – a WONDERFUL thing anytime but especially in colder weather.  Here are some photos of my process:

I put a little dish of water in the oven while they baked & they came out golden & crusty on the outside & soft in the middle.  They would make amazing dinner rolls or as an accompaniment to cheese like – maybe – my Vegan Spicy Jalapeno Cilantro Cashew Nut Cheese – seen just above.  That is a raw cheese and can be made in minutes.

Vegan Crab Cake Po’ Boy with Avocado

Serves one

INGREDIENTS

As many Gardein Crabless Cakes as you desire – fried or baked (I fried mine in a little olive oil)

The roll of your choice

Avocado slices

Lettuce

Coleslaw

Sliced radishes (optional)

DIRECTIONS

Assemble your Po’ Boy!  It is just that simple.  Some bread, a bit of lettuce, a few avocado and/or radish slices, your crabless cakes & some slaw!  BOOM!  Enjoy!

I initially assembled the sandwich with the crab cakes whole but mashing them up made the Po’ Boy easier to eat & more appetizing to look at.  It looks like crab!

This is super easy.  I used purple cabbage, carrots & radishes but just cabbage would be fine.

Vegan Spicy & Sweet Purple Cabbage Slaw

INGREDIENTS

1 cup purple (or other) cabbage – shredded

3 radishes – chopped

1/2 cup carrots – grated or cut into matchsticks

1-2 jaleno peppers – diced (seeded for less heat)

1/4 cup vegan mayo

2 TBS relish

This soup was just a way for me to use up some vegetables & create a creamy, warming bisque – with tomatoes out of season.  Fresh tomatoes would be better but I did not have any & I am attempting to eat only what I have on hand – without spending any money on groceries.  I call it “the pantry challenge.”  I have done it a few times in the past with very strict rules.  This time – I have allowed a few cheats but I am still saving a ton of money.  I have so many leftovers frozen away & so many canned & dry goods – I could literally last months.  The only problem is that produce gets scarce – so – I have allowed a twice-monthly delivery from Farm Fresh to You.  Anyway – I a rambling.

This soup is easy & customizable.   You could sub out or lose a few of the veggie ingredients to suit your fancy.

For the sandwich – I used my homemade Vegan Basil Mozzarella Cheese for Grating & Melting – seen below.

You can use any cheese you prefer.  I also topped it with some hot green chiles of the ilk seen above.  You can use whatever level of heat suits you.

Grilled Cheese & Chiles Sandwich

INGREDIENTS

Bread of choice

cheese of choice

vegan butter or cooking spray

DIRECTIONS

Treat a pan with cooking spray or melted butter.  Butter one side of each slice of bread & spray with cooking spray.  Over medium heat, place the UNBUTTERED side of each slice down for a few seconds to warm them.  Then flip one slice, top with cheese & chiles & the other slice of bread – buttered side up.  Grill, flipping a few times & pressing with a spatula until the cheese gets soft and/or the bread id grilled to your taste.

 Vegan Tomato Basil Bisque

Makes a lot – enough for 4 to eat as a meal or for more people as a side

INGREDIENTS

2 TBS olive oil

1 leek – sliced (or a small onion)

1 red bell pepper – seeded & chopped

3 garlic cloves

5 carrots – chopped

1 jalapeno – seeded & diced (optional)

52 ounces of tomato sauce or diced tomatoes (6-7 cups)

1/4 cup or more fresh basil

1/4 cup vegan cream cheese

1/4 cup vegan milk or cream

S&P

Garnish – fresh basil & maybe vegan cream or sour cream

DIRECTIONS

Heat the oil in a large stock pot.  Add the veggies (carrots, leek, bell pepper, jalapeno) & saute a few minutes – until the leek (or onion) is soft.  Add tomato sauce & garlic.    Bring to a boil.  When the carrots & other vegetables are soft, add the cream cheese, milk & basil.  Combine.  Now – in batches – blend with an immersion blender or a regular blender.  Season with salt & pepper.

Serve with fresh cracked pepper & basil leaves.  Swirl in some cream or sour cream, if you desire.

This is simply a variation of the The Best Fast & Easy Vegan Mozzarella – for Melting & Grating that I posted almost exactly a year ago (seen just above).  This mozzarella has a very subtle flavor of basil & a faint green hue.  I topped it with some basil & olive oil caviar for these photos.  If you are unaware of flavored “caviars” – you are missing out!  They are very pretty!

Anyway – this cheese is for grating & melting on – say – pizzas or grilled cheese sandwiches.  The flavor is a too mild to eat naked though it does taste good.  I used soft tofu & Daiya cream cheese in this.   In the future I will use Tofutti cream cheese (because I prefer it A LOT) and silken tofu – so that is what I will recommend in the recipe.  The images below are of the plain mozzarella – to illustrate its melting properties.

Vegan Basil Mozzarella Cheese for Grating & Melting

INGREDIENTS

1 package silken tofu – drained

1 tsp nutritional yeast (optional)

1/4 – 1/2 cup fresh basil

3/4 cup unsweetened non-dairy milk

1/4 cup vegan cream cheese

1 garlic clove

1 tsp rice vinegar

1 tsp salt

4 tsp agar powder

DIRECTIONS

Blend until smooth the tofu, cream cheese, milk, nutritional yeast, salt, garlic, fresh basil and vinegar. Transfer to a small sauce pan and stir in the agar powder and water. Bring to a boil on medium, stirring frequently until the agar dissolves & the cheese thickens a bit.

I tried to get fancy with some whole basil leaves to top the cheese but they got mixed in with the cheese when I poured it in my pan to set.  The whole leaves looked pretty when I sliced into the cheese so – if you like that look – stir in a few leaves before pouring into the pan to set.

Spray a loaf pan or small casserole dish or – really – any glass container with cooking spray.   Pour cheese in and place in fridge until completely cooled.

When cooled – it just dropped right out of the inverted pan & was ready to devour.

OK – so – I have really been trying to wean myself completely off cheese.  Very few of the vegan cheeses available are very good (in my opinion).  I am especially not fond of the Daiya products.  Daiya has a very distinct flavor that I find distasteful.  I prefer Parmela Creamery & Field Roast’s Chao cheeses.   I have experimented a bit making vegan cheese myself, the most successful being this mozzarella (seen below).

I recently ordered some vegan cheeses from Soledad Goat Sanctuary.  They used to make real goat cheese but they went vegan in the past year or so.  I bought the ones you see below.

While they are all pretty tasty – especially the Chevre-styles – they are textured more like a dip – like hummus.  The cheddar & American styles are a bit more firm – like a spreadable cheese & the chevres are almost runny – like a creamy dip.  I would use the chevre ones in cream sauces.  The other two might make good queso or cheese-based dip – but they will not work for baked things – like lasagna – or pizza.  They would all make a great spread on a sandwich.  The 4 little packages cost $45 with shipping.  So – I think I will wait to find them at the farmers market & taste before I buy & not have that shipping expense.

My cheese here is also quite soft – very like a hummus.  It has some kick and tastes pretty good but – like the Soledad cheeses – won’t work in any recipe where you need grated or sliced cheese.  Still – it is very easy to make.  Adding a bit of salsa to it might turn it into a decent vegan queso.  It was especially easy to make with my new $30 Magic Bullet blender – which I am in love with.  A well-spent $30 at Bed Bath & Beyond.

Vegan Spicy Jalapeno Cilantro Cashew Nut Cheese

INGREDIENTS

1.5 cups cashews (soaked in water for 2-3 hours if you do not have a high speed blender. I did not soak mine.)

3 jalapeno peppers (mix of red & green – if you have access to both) – diced & seeded for less heat

handful of cilantro (& few leaves saved for garnish)

2 TBS lemon

2 TBS nutritional yeast

2 garlic cloves

S&P

1/2 cup (more or less) water

Course ground pepper – as garnish

DIRECTIONS

Reserve a few bits of the diced jalapenos & a few cilantro leaves.

Puree the rest of the ingredients in a high speed blender until very smooth  – only adding as much water as you need to accomplish this.

I used a large ramekin to shape the cheese.  Any small-ish bowl will do.

Line the bowl with plastic wrap & spray with cooking spray.

Place the cilantro leaves on the bottom & add the reserved, diced jalapeno & a handful of coarse ground pepper.  Spoon the cheese in & fold the wrap over it.  Chill until ready to use.  Open the wrap, put a serving plate on top of your bowl & flip it.  Lift the bowl off & remove the plastic wrap.  Serve!

This is a really easy salad – especially if you buy already roasted beets or, like me, roasted them ahead & had them all ready.  I used this ancient grains mix (above) but any grain you prefer could be used – like the quinoa below.

I made the dressing but you could use any dressing you prefer.  I had the gorgeous bottle of blood orange olive oil from my friend, Alyse, but regular olive oil is fine.

How to roast beets:

Heat oven to 400 degrees.  Wash beets well.  Coat with a thin layer of olive oil & wrap in foil.  Cook, undisturbed, for at least 45 minutes (it could take much longer for big ones), until a knife pierces one with little resistance. They may cook at different rates.  Remove the skin on each when they are done by just pushing it off under running water.

Vegan Protein Salad Bowl – Chickpeas & Roasted Beets, Ancient Grains (Quinoa, Amaranth & Millet) with Orange Tahini Dressing & Chia Seeds

Serves 2

INGREDIENTS

4 beets – roasted (as outlined above), peeled & sliced

1 (15 oz) can chickpeas – drained

1 cup of dry grains – cooked as per directions

1/4 cup parsley – chopped

Chia seeds (quantity up to you)

for the Orange Tahini Dressing (makes more than you will need for these two servings)

3 TBS tahini

3 TBS fresh orange juice

2 TBS balsamic vinegar

2 TBS apple cider vinegar

1 TBS maple syrup or agave nectar

1 TBS olive oil (infused with orange if you have it but not necessary)

1 tsp orange zest

1 garlic clove – minced

1/2 tsp dry mustard

DIRECTIONS

Whisk the dressing ingredients together.

Plate the bowls by putting some grains, sliced beets, chickpeas & parsley in each bowl.  Drizzle with dressing to taste.  It does not need much.  Sprinkle with Chia seeds.  Toss.

Devour!

So – I bought those two gorgeous green tomatoes at the farmers’ market.  Legit, unripe green tomatoes.  Harder to find than you may think.  So – I made that first effort with them above – my Easy Vegan Fried Green Tomatoes.  They were simply & delicious but I did not use anything in place of the egg typically used when folks make this & the breading was fragile & did not stick to the slick sides of the tomato slices.  So – today – I used the other tomato for these tacos & used aquafaba in place of eggs.

What is aquafaba?

The word aquafaba is the common name for the cooking liquid of beans and other legumes like chickpeas. You may know it as the typically discarded liquid found in retail cans and boxes of beans, or as the liquid left over from cooking your own.”

I used the liquid from a can of chickpeas and it worked pretty well.   I found that my breadcrumb mixture was still a bit fragile but it seemed to adhere a bit better.

The remoulade is a nice & tangy touch but any sauce you like would do – even vegan salad dressing.

Vegan Fried Green Tomato Street Tacos with Spicy Remoulade

Feeds two

INGREDIENTS

8 small street taco=sized corn tortillas

1 large green tomato – sliced into 1/4 to 1/3 inch rounds (try to get 4 slices)

1/4 cup flour

1/4 cup panko crumbs (I used only panko in these tacos)

1/4 cup cornmeal

1/4 cup breadcrumbs (or any mixture you prefer or have handy)

Cajun seasoning (to taste) or S&P

1/4 cup or so non-dairy milk

The liquid from a can of chickpeas or other beans OR 1/4 cup or so of almond milk

Enough vegetable oil to submerge the breaded tomato in your frying pan

Taco toppings: (your choice) sliced avocado, shredded cabbage, grated carrots, sliced jalapenos, diced tomato, cilantro, sliced radishes, grated lettuce, grated vegan cheese, lime wedges

for the remoulade

1/4 cup vegan mayo

1 tsp Dijon mustard

1-2 TBS prepared horseradish

1 TBS chopped parsley

1 tsp sriracha

1 tsp juice from a jar of jalapenos (optional) or 1 tsp diced pickled jalapeno

Dash of hot sauce

Pinch of each: onion powder, garlic powder,  chili powder, paprika

DIRECTIONS

Prep all the ingredients.

Make the remoulade by whisking the ingredients together.

I only used panko this time.  You can use whatever mixture of crumbs you desire & season as you like – either with a Cajun seasoning or S&P or something else you like.

Wet the tomato slices & dredge them through the flour then the aquafaba (or almond milk) & then the bread crumb mixture.  I dunked mine a second time into the aquafaba & panko.

Heat the oil (deep enough to submerge the tomato slices so they will not require flipping).  Let the oil get very hot & then carefully slide the tomato slices into the oil & fry until they are browned to your liking.  Drain on paper towels.

While the tomatoes drain – warm your tortillas directly on your stove burners.

Cut the tomatoes in half & assemble 8 tacos.  Serve with the accoutrements of your choice & drizzle with remoulade.  Devour!

I had fried green tomatoes in Vicksburg, Mississippi once and I have been obsessed ever since.  The ones there were decadent & I think they had cheese on them or a remoulade and they were amazing.  Since then, I order them whenever they are on the menu.   The other day, I found genuine GREEN tomatoes – meaning – tomatoes that were not yet ripe.  In the past, I have cheated & used ripe, green heirloom tomatoes but they do not have the texture and tang of an authentic green tomato.  Despite being on a pantry strike (eating ONLY what I already have in the house & attempting to spend zero on groceries) – I put out $2.50 for these two beauties.

Hard & shiny & bright green.

Traditionally, the slices of tomato are dipped in a milk & egg mixture & then dredged through a breadcrumb-cornmeal mixture.   Almond milk works just fine & rather than try to sub out the egg with a vegan alternative – I decided to just omit it.  The result was that the crumb mixture had less to grip – especially on the slick edges of the tomato.  But – I am cool with that.  The fried breading is lovely but also the only naughty/guilty part of these guys so – a little less fried stuff is better for my own personal girth.  I only cooked one tomato today.  Tomorrow, I will try a different method & post that but I was very happy with these.  They would go great in a sandwich – like – an avocado, lettuce & fried green tomato sandwich or a grilled cheese with fried green tomatoes.  Again – I am trying to drop a few pounds (over the holidays – right?) so I just ate these naked – but for a few splashes of Crystal – my all-time favorite hot sauce.

Easy Vegan Fried Green Tomatoes

Serves 1

INGREDIENTS

1 unripened green tomato – sliced into 1/4 to 1/3 inch rounds.

1/4 cup panko crumbs

1/4 cup cornmeal

1/4 cup breadcrumbs (or any mixture you prefer or have handy)

Cajun seasoning (to taste) or S&P

1/4 cup or so non-dairy milk

Enough vegetable oil to submerge the breaded tomato in your frying pan

Hot sauce of choice

DIRECTIONS

Mix the dry ingredients in one bowl.  In another bowl – pour some almond milk.  Use enough oil so that your tomatoes will be submerged in it.  This way – you do not have to flip them – increasing the opportunities for the breading to fall off.  Heat your oil until it is very hot – hot enough for a few breadcrumbs to immediately sizzle when dropped into the pan.  Dip the tomato slices in the milk & then the breadcrumb mixture.  I then put each breaded slice back into the milk & crumbs a second time.  When your oil is hot – carefully put the tomato slices in the oil & fry until browned to your desire.  Drain on paper towels.  Serve with hot sauce or a remoulade.

So – the other day I found this amazing new beef replacement at Silom Thai Market.  If you live in LA & you want something that will fool folks they are eating sliced steak – RUN to Silom & go to the center freezer aisle in the middle of the store.  Dig around the freezer-burned packages in the cardboard boxes & find this stuff below.

It is SO convincing – once you load it with yummy flavors like this Szechuan dish.  I served this beef over wide rice noodles (above) that I buy fresh at Bangluck Thai Market.  The two stores are only a few blocks apart in Thai Town & both have their treasures & are worth adventuring into.  If you don’t want or can’t find noodles – rice or whatever will do just as nicely.  This cooks up in just a few minutes & the ingredients are not exotic.   It is a great entry-level Chinese dish.

Vegan Spicy Szechuan Orange Beef & Wide Rice Noodles

Serves 2

Sesame oil

7 or more ounces vegan beef

12 ounces cooked wide rice noodles (or pasta or cooked rice)

1/2 red bell pepper – sliced into thin strips

2 jalapenos – diced (optional)

1/4 onion – diced

1 cup orange or tangerine juice (I freeze juices in 1 cup quantities for future use in recipes)

2 dry red chilies – split (these add a lot of heat & should not be eaten when the dish is finished)

1 TBS liquid aminos (or soy sauce or tamari)

1 tsp Szechuan pepper corns (anise) – crushed in a mortar & pestle or pre-ground

2 TBS hoisin sauce

2 TBS dark soy sauce

2 TBS sambal oelek

1 tsp agave nectar

3 garlic cloves – minced

1 TBS minced fresh ginger

GARNISH – sesame seeds & sliced scallions

DIRECTIONS

Sear the beef in a TBS or two of sesame oil.  Set aside.

In the same pan, heat another 1 -2 tsp sesame oil & saute the red bell pepper, onion & jalapenos.

Then add the juice, Szechuan pepper, hoisin, sambal oelek, dary soy, liquid aminos, ginger, garlic, and agave.  Heat on high until it thickens a bit.  Add the meat and noodles – if you are using them. When the ingredients are well combined & warmed through – serve with sesame seeds & scallion slices.

So – last week on Tuesday – I began a test to see how long I could go without spending ANY money on groceries.  The only cheats allowed would be the delivery of vegetables I get every two weeks from Farm Fresh To You & any restaurant meals.  I eat out VERY seldom so – that second one is not much of a cheat.  Still, I started the challenge out eating that Gardenburger from Carney’s.  That cost me $10 with fries & a drink.  Then, I spent the next week eating things like these:

Vegans, beware!  The Morning Star veggie sausage is merely vegetarian – not vegan.  If I ever eat breakfast (and I seldom do) – it typically looks like that above.

I eat tortilla pizzas a SHOCKINGLY frequent amount of dinners per month.  I adore them.  And that cheese there is vegan!    It is Parmela Creamery cheese.  I like it A LOT more than Daiya which – I think – tastes funny & doesn’t melt easily.

More often than not – I eat a giant, zero-carb, 100-calorie bowl of vegan pho for lunch.  Made with shirataki noddles – it is a wonderfully filly & guiltless soup.

That is a salad of red lettuce, tomatoes & (I admit) a bit of goat cheese.

I also ate my Vegan Butternut Squash & Black Bean Enchilada Casserole with Homemade Red Enchilada Sauce and my Vegan Potato, Leek, Fennel & Turnip Soup with Carrots & Pepitas – seen below, respectively, so I had a pretty well-fed week.  In the past when I attempt the pantry challenge – I do not allow the acquisition of ANYTHING if it can be avoided.  Almond milk for coffee & wine being notable exceptions.  In the past, once the fresh produce ran out, I became reduced to frozen leftovers & lots & lots of dry, white food – like pasta & rice.  Panicked friends began delivering fresh produce so – to avoid a full-scale panic – I am allowing (as I stated) a 2x monthly delivery of veggies.

Well – everything was going great – until yesterday.  I had not spent one cent on food since that burger at Carney’s – 8 days before.  But, yesterday, I got bored.  I wanted to cook.  I wanted to post something on this blog.  So – I cheated & allowed myself a stop in the CRAZY inexpensive Thai market – Bangluck.   Shit is practically free in there but I still managed to spend $52.  Here is the bulk of what I got there:

Those two jars of gluten look like lab specimens but I could not resist.  Each of those cans of varied mock meats are gluten & all cost under $2.  I bought that tofu above for under $2 each – far better than the price at Gelson’s – about a mile away – below.

I Googled it & I guess it is a dance & yoga studio.  Who knew?

Well, my will weakened, I decided to stop by Silom Market – also in Thai Town.  This place is super sketchy and always has a security guard at the front door.  Armed guard to protect bulk spices?  Sorta seems like Silom might be a front for something else – but I digress.   If you go there & decide to buy some of the fresh items they make & sell there – be sure to check ingredients.  By check – I mean GOOGLE.  Let me recount an experience I had there once.

In the cooler section – they had what seemed to be a large selection of locally produced pre-made sauces & curries & pastes….sold in the lidded plastic containers delis use to sell you potato salad. I looked at a bunch of them, mouth watering as I thought of how authentic my dishes would taste if I used these expertly prepared flavorings.  I saw one that looked dark & spicy & read the ingredients

Ingredients: Chili, onion, garlic, mangda, sugar, salt, fish, tamarind paste.  It was called Nam Prik Mang-da.  I love prik pao squid at my beloved Torung & this stuff looked like culinary gold.  I didn’t know what mangda was but wrote it off as an obscure name for a common thing – like my recent anise pepper experience.  $5.  Sold!

Upon closer inspection – I see these curries/pastes are made in-house at Silom!

When I got home – I Googled the name of the chili paste I just bought looking for culinary inspiration.  I was ABSOLUTELY HORRIFIED when the search engine spat out its results.  Here – take a peek and see what MANGDA means – HERE.  Don’t look at the horseshoe crabs.  In fact – here is a stock photo of your garden variety MANGDA:

Yes, folks.  Mangda means giant water bug!!!!!!  OMG!  I’m gagging just looking at that thing!  And I should have known better.  This isn’t my first time crossing paths with these fuckers.  No!  I pointed them out to you guys in my Bangluck Market post.  You can buy 4 of these guys whole, in the refrigerated section, for $4.49 – and they have 35 calories in the 4 together – 15 of which come from fat.  Yeah – they are nearly 50% fat.  Gag.  Needless to say – I threw the $5 container in the trash and pronto.

I was VERY excited by these two discoveries but stopped my impulse to buy the entire stock before I had put them to the taste test.

So – I dropped another $35.  And – when I got home – I realized I wanted red bell peppers for this beef dish so – I went to Gelson’s.  I had a $5 off a $25 purchase so – of course – I had to spend $25.  I filled my basket with what I guessed would just be $25 but I miscalculated.  It never crossed my mind that two red bell peppers would cost over $6!   I also bought the chorizo below.  Gelson’s has a sorta fun (if very expensive) selection of vegan things.  I bought the chorizo – but here are a few of the other vegan delights they offer.  Anyway – I dropped another $40.  So – there’s that.

OK!  On to this Vegan Thai Pad Gra Prow – Spicy Beef & Basil – with Wide Rice Noodles!!!  I added fresh noodles that I bought at Bangluck but this would go just as nicely over rice – or in lettuce wraps.  The revelation is this AMAZING S.P.A. vegan beef!  Read that nutrition label above.  Non-GMO soy protein.  This shit is guiltless and looks EXACTLY like slices of steak!  It is pretty innocuous in the flavor department so – like chicken – it kinda just takes on the flavors you add to it. HERE they are on Facebook.  I will DEFINITELY be buying more & more & more of this stuff.   Once my pantry challenge is over.

This dish is very easy & doesn’t use anything especially exotic.  I recommend it very highly!

Vegan Thai Pad Gra Prow – Spicy Beef & Basil – with Wide Rice Noodles & Bok Choy

SERVES 2 well

INGREDIENTS

A few TBS sesame oil (or olive oil)

7 (or more) ounces vegan beef

12 ounces fresh rice noodles (or cooked pasta or cooked rice)

1/2 red bell pepper – sliced into strips

1/2 small onion – diced

2 jalapenos – diced

2 heads bok choy – cleaned (optional) & chopped a bit

5 garlic cloves – chopped

1 TBS liquid aminos (or soy sauce or tamari) – plus extra

1 tsp dark soy sauce

1 tsp vegan oyster or mushroom sauce

1 TBS sambal oelek

1/2 tsp agave nectar (or brown sugar)

1 cup basil leaves (I used a mixture of Thai sweet basil & Thai holy basil but any basil will do – Thai ones being preferred)

GARNISH – lime wedges, cilantro

DIRECTIONS

If using noodles – separate them under cold running water.  If using pasta or rice – cook it & set aside.

I did not bother to defrost the beef.  It might be easier if you do.  Either way – heat the sesame oil (2 or 3 TBS) in a wok or large saute pan.  Cook the beef until it is seared on both sides.  Set aside.  (I only used 1/2 of the cooked beef in the noodle dish & reserved the rest for another recipe.)  I covered the beef while it cooked to hasted the defrosting.

In the same pan – add a bit of olive (or sesame) oil & heat it.  Add the red bell pepper, onion & jalapenos.  Saute until soft.  Add all the other ingredients except the garlic & basil (and the garnish).  Heat the noodles & meat through & let the bok choy wilt.  I added a bit of extra liquid aminos here because I thought the dish needed a tad more salt & moisture.  This is your call.  Once the bok choy is wilted & the ingredients are well-combined – stir in the garlic & basil.

So – I am several days into eating only food I already have in the house.  I have WAY too many frozen leftovers & dry pastas & beans etc taking up space & yet I keep going to the store to buy more food. It is ridiculous & wasteful.  Today’s recipe was inspired by a huge butternut squash I had & some other veggies rapidly reaching the end of their shelf life.  I used jarred salsa because I had one open but made the enchilada sauce because I did not already have some in a jar or can.  You can choose to go all jarred or all homemade – your call.

I also roasted a whole butternut squash.  You might want to buy some already cubed & roast those – or just boil them.  This can be as labor-intensive or as simple as you care to make it.

The real star of this dish is this newer vegan cheese I found.  It tastes great & does a fair job at melting – so – I recommend trying it if you see it or can find it online.  It is from Parmela Creamery and you can definitely buy it – and loads of other vegan cheeses – from them.

Oh – as an aside – TJ Maxx is a great source for kitchen items.  They always have loads of olive oil marked way down.  I stock up every time I go there.

Vegan Butternut Squash & Black Bean Enchilada Casserole with Homemade Red Enchilada Sauce

Serves 6 well

INGREDIENTS

2 cups red enchilada sauce (my recipe HERE) or your favorite brand or recipe

16 oz salsa – homemade or your favorite brand

olive oil

1 small butternut squash

1/2 medium red (or any other kind) onion – diced

1-3 jalapenos (optional) – seeded & diced

3 tomatoes – diced

2 carrots – diced

1 cup corn

1 12 oz can black beans – drained

1-4 garlic cloves – minced

1/4 cup cilantro – chopped

1 tsp ground cumin

1 tsp chili powder

15-20 taco-sized corn tortillas

Up to 1 lb grated vegan cheeses of your choice ( I used both cheddar & mozzarella)

S&P to taste

GARNISH: cilantro, sliced scallions, avocado slices, additional salsa or hot sauce

DIRECTIONS

Heat the oven to 375.

I roasted my butternut squash unpeeled & halved.  It was a sorta messy business doing it this way.  In the future, I will peel & cube it first.  Whatever you decide – roast it naked for 20-40 minutes, turning at least once, until it is soft.  If you cooked it like I did – let it cool in the sink & peel & cube it once it is cool enough to handle.  OR – you could peel, cube & boil it until the cubes are soft.  I had a large squash – so I put some extra mashed up into my dogs’ dinner.  They loved it!

Meanwhile, heat 1-2 TBS olive oil in a large saute pan & add the chopped carrots & onions.  When they start to soften, add the tomatoes, jalapenos, corn & black beans.  Add the spices & cilantro.  Heat through.  Add the garlic & saute 1 minute.  Stir in the cubed squash.  Season with S&P & set aside.

Now – assemble the casserole.  Grease a casserole pan (I used cooking spray).  Put the salsa on the bottom.  The rest can be pretty random – as long as you end with 1/3 of the enchilada sauce & 1/3 of the cheese.

Layer some corn tortillas & top with 1/3 of the veggie mixture, 1/3 of the cheese & 1/3 of the enchilada sauce.

Add another 1/3 of the veggie mixture.  Layer with  1/3 of the cheese, more tortillas, the final 1/3 of the veggie & 1/3 of the enchilada sauce.

Add another layer of tortillas & the rest of the enchilada sauce & cheese.

I used the casserole glass lid to cover it.  You can do this or use foil.

Bake at 375 for about 25 minutes, remove cover & bake another 10 minutes or so.  Let rest for ten minutes before serving.

Garnish with cilantro or scallions & maybe salsa, hot sauce or a few slices of fresh avocado.  Enjoy!

Vegan Potato, Leek, Fennel & Turnip Soup with Carrots & Pepitas

This soup is very easy & guiltless & comforting & delicious.  I roasted the turnips because I was roasting other veggies & just included them.  Once they were done, I though – why not add them to this soup.  You could roast all the veggies n this soup first, if you wanted to, but that is not necessary.  There is enough flavor going on without that extra step.  The vegetables I used were random & included simply because I had them around.  You can add or delete ingredients according to your taste or what you have handy.

Vegan Potato, Leek, Fennel & Turnip Soup with Carrots & Pepitas

Makes about 8 cups

INGREDIENTS

3 TBS vegan butter

1 large fennel bulb – chopped (reserve some fronds for garnish)

1 large leek – sliced

1 zucchini – sliced

2 celery stalks – chopped (reserve a few celery leaves for garnish

3 large potatoes – peeled & cubed

3 small turnips – chopped

4 carrots – sliced

4 cups vegetable stock

2 TBS fresh oregano (plus maybe a bit extra for garnish)

2 TBS fresh thyme (plus maybe a bit extra for garnish)

Vegan milk (I used unsweetened almond milk) – maybe a cup or so

S&P

Pepitas as garnish

DIRECTIONS

I like a few chunks in my pureed soups so – if you do, too – take one carrot & one potato (both cubed) & boil until soft.  Drain & set aside.

If you want the soup completely pureed – skip that step.

Heat the butter in a large stock pot.  Add the chopped, raw veggies & saute until soft.  Add the stock & herbs (no need to chop the herbs) & bring to a boil.

Very carefully, in batches, blend the soup smooth.  I added just enough almond milk to each batch so that it blended very smoothly.  Reheat.  Add the boiled carrots & potatoes.  Ladle into bowls & garnish with celery leaves or fennel fronds & some pepitas.  Add some cracked pepper.  Enjoy!
