Farro is a barley-like grain with a nice, chewy texture & a sort of nutty flavor. It cooks in about 10 minutes & is a nice change from rice. I bought mine at Trader Joe’s but I bet you can find it at Whole Foods or health food stores, too.
This recipe could not be any easier. And you can eat it warm or cold.
Cilantro and Lime Farro
9 oz dry farro (makes about 2 cups cooked farro)
1 cup cilantro – chopped
6 cups vegetable stock
A pinch of cumin
A pinch of garlic powder
Zest & juice of 1-2 limes – according to how much lime you like
Boil the stock & add the farro. Cook for 10-12 minutes (or according to package directions – if you do not have this quick cook variety) and drain the excess stock.
Stir in the other ingredients. Voila!
